Sylvena Roy is known on the world culinary scene as the "queen of delicious and healthy eating". She was born in Bulgaria, but at the age of 19 she moved to London, where she started her successful career. He is fast becoming one of the top names on the world stage, cooking in restaurants from London to Dubai, and from November 2021 he is the exclusive Resident Wellness Chef at one of the newest luxury resorts JOALI Maldives. Very soon, he presented to the Bulgarian public the books "My Kitchen" and "Gourmet Baby" with author's healthy recipes.
The art of the good life lies in the respect we have for ourselves. It would be great to own a beautiful home, a private jet, luxury goods, travel, but the greatest luxury is eating healthy, with the right foods to be the best version of yourself. Thus, a person is healthy, fresh and long-lived. And longevity does not exist without healthy nutrition. If you are not healthy, what is the use of living many years? How you will enjoy your home, your travels and your belongings. The secret is to self-respect your body and spirit with the food you eat and make it an existential priority.
Of course, energy connects them. I have worked for some of the most famous people in the world, but I have also cooked on military fields, for charity. I've been in different kitchens. When the kitchen is well equipped it is easy and organized, the food is delicious. I have always said that the home should be organized around the kitchen, because it is the heart of every home.
For me, travel is a pleasure, creativity. A holiday destination in itself does not exist for me. I am currently in the Maldives at the JOALI Resort where I am the Resident Wellness Chef preparing special exclusive healthy menus for six restaurants. But I don't work all the time, I also have time for relaxation, but I'm not a fan of the beach. My favorite destination remains Dubai because the environment there is organized, pleasant and positive. When I travel to other countries and come back to Dubai, I feel calm. It is my favorite place. I also like to return to Bulgaria, I love my country. I don't stay in the same location for long.
I specialize in the so-called "longevity protocol" - longevity protocols that are entirely based on biohacking practices. I always get to know the guests, some of whom are big world stars from different fields. For me, the choice of healthy eating, however, is not a matter of fame and money, but of culinary culture.
The Maldives brings constant tranquility and a sense of the joy of life. When you are here, you feel different, alone, in a private paradise. You feel comfort, convenience, high-class luxury. You're running away from reality. There is luxury everywhere in the world, but here it is served unpretentiously. The visitor decides to what extent he wants others to be involved in his stay.
My meals are based on superfoods. I have a great wellness breakfast menu - green shak-shuka, full of polyphenols and phytonutrients, it's very different from the standard one. I have a great zucchini, avocado and chimichurri toast. I bet on different, and acai bow is one of the most preferred morning meals, as well as smoothies. I rely on superfoods like spirulina, especially blue spirulina, blueberries, bee pollen, chia, oats and lots of wonderful greens from my herb garden on the island.
I really like cooking at JOALI's Japanese restaurant, where I mostly cook fish. For me, Maldivian tuna is one of the best. I also bet on the lobsters, which are about 1.5 kg and are incomparably delicious, prepared with the right technique. I have special six-course dinners in which I have included a lot of caviar. I prepare different types of ceviche, carpaccio or tuna tartare. The Maldives is close to Sri Lanka and India, where we get a lot of fresh seafood. In my herb garden I grow fresh herbs, edible flowers, leaves. I mainly rely on these products.
These are definitely my wellness menus because they are gluten-free, the desserts are sugar-free. My dishes are always with seafood - I can say that my favorite dish is my iconic tuna tartare, which is truly a unique magic for the palate.
The attention to detail here is indescribable - I am impressed by the interior solutions, high ceilings, wood, marble. The luxury is amazing - modern, simple, comfortable. And the beds are incredibly comfortable and guarantee a refreshing sleep.

I am a boss and a wellness consultant coach. For selected exclusive clients, I create alternative wellness menus that have wellness elements and are different. They don't include fried food, they don't contain salt, I use alternative sugar. They are much lighter and healthier, but they are not a strict diet regime.
