Nikolay Grigorov is the man behind one of our favorite places in Sofia - "Rocket Rakia Bar", "Sputnik", "Cosmos" and "Fabrika Arc". Education is an engineer. Before working with the restaurant business, he worked in the IT sector. Nicholas admits that the two activities are radically different. It combines only the enthusiasm with which he approaches them. Obviously, people who make it kind of make it not just a hobby or a profession, but a way of life. In his free time, he enjoys active sports - kite surf in the summer and ski and snow kite in the winter. He likes the freedom and harmony that these activities give him. At the same time, contrary to this dynamics, practicing yoga, in which it finds peace and balance.
The reason to meet Nicolas is his rich collection of brandies. He says his interest in the beverage had begun long before he opened the bar of the same name. When she is of age, she tries the traditional grape brandy. She began to receive gifts in the form of various brandy varieties - young or aged in different years. He acquainted himself with the rich variety of tastes from different parts of Bulgaria and neighboring countries. This awakens the desire to unite this whole palette of traditions in one place where more people have the opportunity to touch the ritual of tasting Bulgarian brandy. She decides to revive her as a modern drink among modern, urban people. This is how the idea of "Rocket Rakia Bar" is born.
Nikolay is constantly filling his collection. He likes to find new varieties by visiting different places in Bulgaria. He likes to meet the people who make brandy personally, talk to them about how they grow the beverage, have a rich harvest this year, what difficulties they encounter, and if they decide to reveal some subtlety. "Craft is best passed from mouth to mouth and from generation to generation. History has proven it," says Nicholay. Among the most valuable varieties in its collection of rakia distinguishes Royal Amber, Damianitza, Kulturna, Troyan Slivova 25 and Rakeda Medena.
